Valentine's Day Supper

Kurt and I searched on our computer to find knock-off recipes from some of our favorite restaurants so we could enjoy a nice Valentine's evening at home instead of waiting all evening for a table. We found a bunch of Olive Garden recipes, so we picked one to try. It was the Sicilian Shrimp Scampi. Here is the recipe with a few minor changes that I made for our taste:

1/2 lb. angel hair or thin spaghetti
1 lb. shrimp, peeled and raw
1/4 cup olive oil
1/4 cup butter
5 cloves garlic, minced
2 green onions, chopped
1 cup white wine
2 Tbs flour mixed with 2 Tbs water (makes a thick paste)
4 Tbs lemon juice
1 1/2 cups heavy cream
2 cups grated Parmesan cheese

Cook pasta per directions on package. Heat olive oil and butter in large pan, add garlic, wine, and lemon juice. When mixture begins to boil, add shrimp and green onion. Cook until shrimp turn pink and remove the shrimp from the pan, leaving the wine mixture in the pan. Add the flour paste and whisk it in well. Pour in cream and Parmesan cheese. Sauce should be a medium thick consistency and smooth. Add the pasta and shrimp back to the pan and toss to coat everything well.

I served this with garlic bread, salad with Italian dressing, and strawberry shortcake. Kurt said mine was better than Olive Garden. We have lots of leftovers for today and possibly tomorrow. Hope you all had a nice Valentine's Day.
